Workday Dinners: Potsticker Salad
Easy weeknight recipe for you kids that meets my weeknight criteria:
- Can be prepared in less than 20 minutes when I get home late from work, ravenous
- Makes easy leftovers for lunch the next day (there’s nothing I hate more than having to eat a turkey sandwich for lunch)
Here goes:

- Snow Peas
- Salad Mix
- Coleslaw Mix
- Tri Colored Bell Peppers
- Frozen Potstickers
- Sesame Oil
- Ginger Dressing
Heat the oil in a pan and saute the potstickers for about 6-8 minutes (throw away the sauce it comes with). Chop bell peppers and snow peas, mix with salad and coleslaw mix. Dress with 2 TBSP of ginger dressing (hold back the salad you want have for leftovers tomorrow). Top with the cooked potstickers & enjoy
The real trick to this salad? The dressing - if you can find this stuff in the grocery it makes you feel like you’re out at a sushi restaurant!
